pas|teur|ize «PAS chuh ryz, -tuh-», transitive verb, -ized, -iz|ing.
1. to heat (milk, wine, beer, or other liquid) hot enough and long enough to kill harmful bacteria and to prevent or stop fermentation. Pasteurizing milk to at least 145 degrees Fahrenheit (63 degrees centigrade) for about 30 minutes, and then chilling it quickly to 50 degrees Fahrenheit (10 degrees Celsius) or less, kills the bacteria of undulant fever and bovine tuberculosis.
2. Obsolete. to treat or prevent (rabies) by Pasteur's technique of virus inoculation.
